This is a delectable dessert, fun to serve to others at a gathering or party.  Dried dates are very sweet and sticky, making them the perfect ingredient to bind these truffles together and balance out the slight bitterness of unsweetened cocoa powder. Here, we provide the instructions for cocoa powder, but you can also roll the truffles in chopped almonds or shredded coconut in the final step.  

Ingredients


Almonds - 1 ½ cups Dates - 1 cup dried, pitted, chopped Cocoa-powder - ¼ cup + 2 Tablespoons for coating Spices - ¼ teaspoon cinnamon or ground cardamom Vanilla - 1 teaspoon vanilla extract Water - 2-3 Tablespoons Salt - 1 pinch

Instructions

Step 1
Using a food processor or blender, grind the almonds into a fine meal. Add the date, cocoa powder, cinnamon, and salt. Blend together and add water, one tablespoon at a time until it forms a dough.
Step 2
Roll heaping tablespoons of the mixture into balls and roll in the extra cocoa powder.
Step 3
Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.

Notes

Substitute toppings with alternative nuts (walnuts, cashew, pecans) or dried coconut.
