Spinach dip is a deliciously warm dip perfect for dipping tortilla chips, pretzels, carrots, pita chips, celery, cucumber, and peppers. 

Ingredients


Spinach - 1 (10 oz) package frozen Onion - 1 medium Garlic - 2 cloves Carrot - 1 medium Olive_oil - 1 Tablespoon (or another vegetable oil) Greek_yogurt - 1 cup plain (can use fat free or 2%) Mayonnaise - ¼ cup (can use low-fat or fat-free) Salt - ½ teaspoon Thyme - ½ teaspoon dried Parsley - ½ teaspoon dried Smoked_paprika - ¼ teaspoon

Instructions

Step 1
Defrost the spinach in the microwave. Allow it to cool and then use your hands to squeeze out as much water as you can. Set it aside in a medium bowl.
Step 2
Dice the onion and carrot and mince the garlic.
Step 3
Add the olive oil to a frying pan over medium heat. Add the onion, carrot and garlic and sauté until onions are translucent, about 5 minutes.
Step 4
Add the cooked vegetables, yogurt, mayonnaise, salt, thyme, parsley, and paprika to the bowl with the spinach and mix.
Step 5
Chill for at least 20 minutes to allow flavors to blossom. Serve with vegetables, pita or your favorite crackers!

Notes

This is a veggie-packed dip! Add some freshly grated garlic or your favorite hot sauce for a little kick!
