Why make an oat crust? Oats are high in heart-healthy fiber, and it is simple to make a flour out of oats with a blender. Most quiches use wheat flour and butter, but this one uses oil which has heart-healthy fats. Make these for your friends or family and they will be sure to impress! Try serving this with our Watermelon with Mint and Honey Yogurt Dip.

Ingredients


Oats - 1 cup Oil - 2 Tablespoons canola or avocado oil Water - 2 Tablespoons Salt - ¼ teaspoon Eggs - 6 Parmesan_cheese - ½ cup Broccoli - 8oz (½ lb) Salt - 1 pinch Pepper - 1 pinch Seasoning - 1 teaspoon Italian seasoning, cayenne, paprika, or other seasoning of choice

Instructions

Step 1
Preheat the oven to 350°F.
Step 2
Blend oats in a blender until a flour like consistency. Add to a bowl. Add salt, oil, and water and mix with your hands until a dough forms.
Step 3
Spray muffin tin with nonstick cooking spray. Separate dough into 6 small balls and press each into the muffin tins to cover the bottom and sides.
Step 4
Pour the broccoli into a microwave safe bowl. Re-freeze any leftover vegetables. Microwave broccoli for 5-6 minute or until completely defrosted. Remove the excess water by pouring the broccoli into a colander and pressing down with your hands.
Step 5
Crack the eggs into a bowl and scramble. Add the cheese, salt, and pepper. Pour into each muffin tin.
Step 6
Bake for 15 minutes or until eggs are firm. Let cool.
