Campus Construction Update

Starting September 14, we’re closing the Menino building lobby entrance. This, along with the ongoing Yawkey building entrance closure, will help us bring you an even better campus experience that matches the exceptional care you've come to expect. These are delicious and extremely moist, flour-free brownies. Give this is a try if you cannot eat gluten, or if you're looking to add some nutrients to your brownies, as sweet potatoes are rich in dietary fiber and vitamin A! 

Ingredients


Sweet_potato - 1 medium Honey - ¼ cup Nut_butter - ¼ cup peanut, almond or sunflower seed butter Cocoa_powder - ¼ cup

Instructions

Step 1
Preheat oven to 350 degrees F.
Step 2
Microwave sweet potatoes for 6-10 minutes or until very soft (time will vary based on microwave).
Step 3
While the potatoes are cooking, add the honey, peanut butter, and cocoa powder into a large bowl.
Step 4
Allow the potato to cool slightly, cut in half, peel off the skin,and add to the bowl.
Step 5
Mash with a form until smooth and until well combined.
Step 6
Bake for 10-15 minutes.
