An omelette wrapped up in a homemade chapati, this is a popular food item in Uganda. If you are short on time, use a store-bought wrap instead of making the chapati. To balance out the meal, serve alongside a green salad with additional protein in it (beans, chicken, cheese, nuts).

Chapati:

- 2 teaspoon (10 ml) canola oil
Water
- ¾ cup (200 ml)

- 3 ¼ cups (500 grams)

Omelette:
Eggs
- 6 large
Onion
- ¼ medium onion
Tomatoes

Instructions
Step 1
Chapati: combine water, salt, sugar and oil in a bowl. Add the flour and mix until it comes together in a shaggy mound. Knead until smooth (about 10 minutes) on a clean surface. Form a ball, place in the bowl, cover and let rest for 30 minutes.
Step 2
Garnish: thinly slice or dice the garnish vegetables, combine and set aside.
Step 3
Chapati: cut the dough into 6 equal pieces. Individually wrap 4 pieces in freeze or refrigerate for future use. See note. Roll out 1 piece of dough to be 6-8” in diameter. Heat 2 teaspoons of oil in a skillet and wait for it to get hot. Add the rolled out dough, and cook for about 1-2 minutes on each side until golden and bubbling. Remove to a plate. Repeat with another piece of dough.
Step 4
Omelette: dice the onion and tomato for the omelette, and combine in a bowl. Crack the eggs into the bowl, and whisk to combine. Season with salt and pepper. add 1 Tablespoon oil to the hotskillet, then add half the egg mixture. Tilt the pan so the egg evenly covers the skillet. Cook until it is congealed and browning on the bottom. Add one chapati on top and pat it down to stick to the egg. Flip the rolex using a spatula and cook on the other side, about 1 minute, to let the egg finish cooking. Add half the slaw mixture on top of the egg and roll it up. Repeat with the rest of the egg mixture and the other chapati.
Step 5
Cut each rolex in half, so you have four pieces. Enjoy!
Notes
If you freeze the extra dough, it is best used within 3 months. If you store in the fridge, use within 3 days. Alternatively, you can cook all the chapati and eat it in the next few days.
